Orofino Farmers’ Market
The Orofino Farmer’s Market meets weekly at Orofino City Park every Tuesday from
3 to 7 p.m.
This week’s featured vendor at the Orofino Farmers’ Market is the Stottlemyer family of Summer Hill Farm located in Kooskia. David, Cheryl, Jolene and Kayla (pictured l to r) originally from Riverside, CA, all work together to offer strawberries, blueberries, zucchini, crookneck squash, Swiss chard, green beans, and broccoli.
David was diagnosed with a rare type of cancer last year. His wife looked into recipes that would help nutritionally. David has a B.A in Agriculture and currently offers classes in gardening seminars. DVDs are available for those who would like to take gardening seriously..
The family has always been health conscious, but became much more aware of nutrition after David’s diagnosis. Baked apple cinnamon granola is offered, containing no sugar – which cancer is known to feed upon.
Produce awaiting to be harvested include a large variety of tomatoes, and potatoes, winter squash, cauliflower, cabbage, onions, corn, and bell peppers.
Recipe of the Week
Savory Mexican Pinto Beans
Place 5 cups of beans into a 5 quart crockpot. Add 15 cups of water.
Add the following seasonings into the water:
2 tsp. chili powder (or to taste)
2 tsp. cumin (or to taste)
2 Tbsp. salt
1 ½ tbsp garlic powder (or fresh garlic)
Cook on high overnight. In the morning, blend together and add to beans:
½ bunch of cilantro
½ large onion
15 oz. can of tomato sauce
Turn crockpot to warm until flavors blend (a couple of hours).
Healing with foods
Pinto beans are a very good source of cholesterol-lowering fiber, as are most other beans. In addition to lowering cholesterol, pinto beans' high fiber content prevents blood sugar levels from rising too rapidly after a meal, making these beans an especially good choice for individuals with diabetes, insulin resistance or hypoglycemia.
When combined with whole grains such as brown rice, pinto beans provide virtually fat-free, high quality protein. But this is far from all pinto beans have to offer.
Pinto beans are also an excellent source of molybdenum, a very good source of foliate and manganese, and a good source of protein and vitamin B1 as well as the minerals phosphorus, iron, magnesium, potassium, and copper.
